The Seasonist Seaweed with British Sweet Dulse

Just sea salt and British Dulse - less of an aromatic perhaps than an umami flavour-booster. Dulse has a kind of natural sweetness that goes superbly with all kinds of green vegetables, in stir-fries, in soups and Pho - anywhere you might otherwise use soya sauce or fish sauce. Its savouriness elevates starchy foods like potatoes and it's great used to season the dough for home-made pasta and sourdough bread.
